This no-carb stroganoff skips the noodles, veggies, and thickeners. It’s all about rich flavor—seared beef in a creamy beef fat and sour cream sauce. Perfect for strict carnivore or zero-carb eaters who still want comfort food.

Ingredients
1 lb ribeye or sirloin steak, thinly sliced
Salt, to taste
2 tablespoons beef tallow (or butter)
½ cup beef broth (homemade preferred)
½ cup sour cream
Optional: ¼ teaspoon garlic powder (if not strict carnivore)
Directions
- Season beef slices lightly with salt.
- Heat beef tallow in a skillet over medium-high heat. Sear beef in batches until browned, about 1–2 minutes per side. Remove to a plate.
- Lower heat to medium and add broth. Let simmer for 2–3 minutes to reduce slightly.
- Stir in sour cream and optional garlic powder if using. Let warm gently—don’t boil.
- Return beef to the pan, stir to coat, and heat through.
- Serve as-is or with optional shredded cheese on top.
