Ingredients

  • 2 lbs ground beef

  • 2 tbsp taco seasoning (sugar-free)

  • 1 cup diced tomatoes (or Rotel)

  • 1 cup shredded cheddar cheese

  • 2 avocados, diced

  • ½ cup chopped red onion

  • 6 –8 cups shredded romaine or iceberg lettuce

  • ½ cup sour cream

  • Fresh cilantro (optional)

Directions

  • In a large skillet over medium heat, cook the ground beef until fully browned. Drain any excess grease.
  • Stir in taco seasoning and diced tomatoes. Simmer for about 5 minutes to thicken.
  • Divide lettuce among 4 bowls. Top each with beef, cheese, avocado, and red onion.
  • Finish with a dollop of sour cream and sprinkle with cilantro if using.
