Ingredients
2 lbs ground beef
2 tbsp taco seasoning (sugar-free)
1 cup diced tomatoes (or Rotel)
1 cup shredded cheddar cheese
2 avocados, diced
½ cup chopped red onion
6 –8 cups shredded romaine or iceberg lettuce
½ cup sour cream
Fresh cilantro (optional)
Directions
- In a large skillet over medium heat, cook the ground beef until fully browned. Drain any excess grease.
- Stir in taco seasoning and diced tomatoes. Simmer for about 5 minutes to thicken.
- Divide lettuce among 4 bowls. Top each with beef, cheese, avocado, and red onion.
- Finish with a dollop of sour cream and sprinkle with cilantro if using.
