Creamy Tuscan Chicken Keto Bowl

Ingredients
1 ½ lbs boneless, skinless chicken breasts
1 tbsp olive oil
½ cup heavy cream
½ cup chicken broth
½ cup chopped sun-dried tomatoes (drained)
2 cups fresh spinach
½ tsp garlic powder
Salt and pepper to taste
4 cups cauliflower rice (cooked)
Directions
- Slice chicken breasts in half lengthwise for thinner cutlets. Season with salt, pepper, and garlic powder.
- Sear chicken in olive oil until golden and cooked through. Set aside.
- In the same pan, add broth, cream, and sun-dried tomatoes. Simmer for 3–4 minutes, then stir in spinach until wilted.
- Return chicken to pan and simmer another 2–3 minutes.
- Serve over cauliflower rice with sauce spooned on top.
Notes
- Sub in kale for spinach or add mushrooms for variety.
