Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts

  • 1 tbsp olive oil

  • ½ cup heavy cream

  • ½ cup chicken broth

  • ½ cup chopped sun-dried tomatoes (drained)

  • 2 cups fresh spinach

  • ½ tsp garlic powder

  • Salt and pepper to taste

  • 4 cups cauliflower rice (cooked)

Directions

  • Slice chicken breasts in half lengthwise for thinner cutlets. Season with salt, pepper, and garlic powder.
  • Sear chicken in olive oil until golden and cooked through. Set aside.
  • In the same pan, add broth, cream, and sun-dried tomatoes. Simmer for 3–4 minutes, then stir in spinach until wilted.
  • Return chicken to pan and simmer another 2–3 minutes.
  • Serve over cauliflower rice with sauce spooned on top.

Notes

  • Sub in kale for spinach or add mushrooms for variety.
