Ingredients

  • 1 can salmon, drained and flaked

  • 1 egg

  • ½ cup panko breadcrumbs (plus extra for coating)

  • 2 tbsp mayonnaise

  • 1 tsp Dijon mustard

  • 1 tbsp Cajun seasoning (adjust for spice preference)

  • 1 green onion, finely chopped

  • 1 tsp garlic powder

  • 1 tbsp fresh lemon juice

  • 2 tbsp vegetable oil (for frying)

Directions

  • In a bowl, mix together salmon, egg, breadcrumbs, mayonnaise, Dijon mustard, Cajun seasoning, green onion, garlic powder, and lemon juice until well combined.
  • Form into 4 patties and coat each patty lightly with extra panko breadcrumbs.
  • Heat oil in a large skillet over medium heat. Cook patties for 3-4 minutes per side until golden brown and crispy.
  • Drain on paper towels and serve hot.

Notes

  • Serve with a spicy remoulade sauce (mix mayo, Dijon mustard, hot sauce, and pickles) and a side of coleslaw or Cajun rice.
