Crispy Cajun Salmon Patties

Ingredients
1 can salmon, drained and flaked
1 egg
½ cup panko breadcrumbs (plus extra for coating)
2 tbsp mayonnaise
1 tsp Dijon mustard
1 tbsp Cajun seasoning (adjust for spice preference)
1 green onion, finely chopped
1 tsp garlic powder
1 tbsp fresh lemon juice
2 tbsp vegetable oil (for frying)
Directions
- In a bowl, mix together salmon, egg, breadcrumbs, mayonnaise, Dijon mustard, Cajun seasoning, green onion, garlic powder, and lemon juice until well combined.
- Form into 4 patties and coat each patty lightly with extra panko breadcrumbs.
- Heat oil in a large skillet over medium heat. Cook patties for 3-4 minutes per side until golden brown and crispy.
- Drain on paper towels and serve hot.
Notes
- Serve with a spicy remoulade sauce (mix mayo, Dijon mustard, hot sauce, and pickles) and a side of coleslaw or Cajun rice.
