Ingredients

  • 1 ½ lbs boneless, skinless chicken thighs

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp dried oregano

  • ½ tsp garlic powder

  • Salt and pepper to taste

  • 4 cups chopped romaine lettuce

  • 1 cup cherry tomatoes, halved

  • ½ cup cucumber, sliced

  • ¼ cup sliced red onion

  • ½ cup crumbled feta cheese

  • ½ cup tzatziki sauce (store-bought or homemade)

Directions

  • In a bowl, toss chicken thighs with olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Marinate at least 15 minutes.
  • Grill or pan-sear chicken until cooked through. Let rest, then slice.
  • Assemble bowls with romaine, tomatoes, cucumber, red onion, and feta.
  • Top with sliced chicken and a generous spoonful of tzatziki.

Notes

  • To make your own tzatziki, combine plain Greek yogurt, grated cucumber, lemon juice, garlic, and dill.
