Greek Chicken Keto Bowl with Tzatziki

Ingredients
1 ½ lbs boneless, skinless chicken thighs
1 tbsp olive oil
1 tbsp lemon juice
1 tsp dried oregano
½ tsp garlic powder
Salt and pepper to taste
4 cups chopped romaine lettuce
1 cup cherry tomatoes, halved
½ cup cucumber, sliced
¼ cup sliced red onion
½ cup crumbled feta cheese
½ cup tzatziki sauce (store-bought or homemade)
Directions
- In a bowl, toss chicken thighs with olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Marinate at least 15 minutes.
- Grill or pan-sear chicken until cooked through. Let rest, then slice.
- Assemble bowls with romaine, tomatoes, cucumber, red onion, and feta.
- Top with sliced chicken and a generous spoonful of tzatziki.
Notes
- To make your own tzatziki, combine plain Greek yogurt, grated cucumber, lemon juice, garlic, and dill.
