4 bone-in, skin-on chicken thighs (or boneless, if preferred)
1 pound baby potatoes, halved
2 large carrots, sliced into rounds
1 cup green beans, trimmed
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1/2 teaspoon teaspoon paprika
1/2 teaspoon teaspoon red pepper flakes (optional)
2 tablespoons olive oil
Juice of 1 large lemon (plus lemon slices for garnish)
1/2 cup chicken broth
2 tablespoons unsalted butter, cubed
1 tablespoon chopped fresh parsley (for garnish)
Directions
- Season the chicken: In a small bowl, mix the salt, pepper, oregano, paprika, and red pepper flakes. Rub this mixture onto both sides of the chicken thighs.
- Sear the chicken (optional): Heat the olive oil in a skillet over medium-high heat. Sear the chicken for 2–3 minutes per side until golden brown. This step adds extra flavor but can be skipped for convenience.
- Assemble in the slow cooker: Add the potatoes, carrots, and garlic to the bottom of the slow cooker. Place the seared (or raw) chicken on top.
- Add liquids: Pour in the lemon juice and chicken broth. Scatter the butter cubes over the chicken and vegetables.
- Slow cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and the vegetables are cooked through.
- Add green beans: In the last 30 minutes of cooking, add the green beans to the slow cooker.
