Ingredients
1 ½ lbs ground beef
1 medium eggplant, thinly sliced
1 cup no-sugar-added marinara sauce
1 cup ricotta cheese
2 cups shredded mozzarella
1 tsp Italian seasoning
Salt and pepper
Directions
- Preheat oven to 375°F.
- Salt eggplant slices and let sit 10 minutes. Pat dry.
- In a skillet, cook beef with marinara, Italian seasoning, salt, and pepper.
- In a greased 9×13-inch baking dish, layer eggplant, ricotta, and beef mixture. Repeat once.
- Top with mozzarella and bake for 30–35 minutes, or until hot and golden.
