Ingredients

  • 1 ½ lbs ground beef

  • 1 medium eggplant, thinly sliced

  • 1 cup no-sugar-added marinara sauce

  • 1 cup ricotta cheese

  • 2 cups shredded mozzarella

  • 1 tsp Italian seasoning

  • Salt and pepper

Directions

  • Preheat oven to 375°F.
  • Salt eggplant slices and let sit 10 minutes. Pat dry.
  • In a skillet, cook beef with marinara, Italian seasoning, salt, and pepper.
  • In a greased 9×13-inch baking dish, layer eggplant, ricotta, and beef mixture. Repeat once.
  • Top with mozzarella and bake for 30–35 minutes, or until hot and golden.
