Ingredients

  • 1 ½ lbs ground beef

  • 1 cup riced cauliflower

  • 1 ½ cups low-carb enchilada sauce

  • 1 ½ cups sour cream (mix 1 cup in mixture, reserve ½ cup for topping)

  • 2 cups shredded cheddar cheese

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp garlic powder

  • Optional: chopped cilantro for garnish

Directions

  • Preheat oven to 375°F.
  • In a skillet, brown the ground beef and add salt, pepper, chili powder, cumin, and garlic powder.
    Stir in the riced cauliflower and 1 cup of enchilada sauce, simmering slightly to integrate.
