Ingredients
1 ½ lbs ground beef
1 cup riced cauliflower
1 ½ cups low-carb enchilada sauce
1 ½ cups sour cream (mix 1 cup in mixture, reserve ½ cup for topping)
2 cups shredded cheddar cheese
1/2 tsp salt
1/4 tsp black pepper
1 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
Optional: chopped cilantro for garnish
Directions
- Preheat oven to 375°F.
- In a skillet, brown the ground beef and add salt, pepper, chili powder, cumin, and garlic powder.
Stir in the riced cauliflower and 1 cup of enchilada sauce, simmering slightly to integrate. - Stir in the riced cauliflower and 1 cup of enchilada sauce, simmering slightly to integrate.
- Mix in 1 cup of sour cream into the beef mixture for even moisture distribution.
- Spread this mixture in a greased 9×13-inch baking dish. Spread reserved sour cream across the top, followed by shredded cheese.
- Bake for 30 minutes, or until hot and bubbly.
- Garnish with chopped cilantro if desired.
