Ingredients

  • 1 ½ lbs 80/20 ground beef

  • 1 cup mushrooms, sliced (divided: ¾ cup for cooking, ¼ cup for topping)

  • 1 small onion, chopped

  • 1 ½ cup sour cream

  • 2/3 cup beef broth

  • 1 tsp paprika

  • 1 ½ cups shredded mozzarella

  • ½ cup shredded cheddar

  • Salt and pepper

Directions

  • Preheat oven to 375°F.
  • In a large skillet, cook the ground beef, ¾ cup of the mushrooms, and onion until the beef is no longer pink and the onions are translucent. Do not overcook the beef, it may result in a dry dish.
  • Drain any excess grease.
  • Stir in sour cream, beef broth, paprika, salt, and pepper. Simmer for a few minutes to thicken slightly.
  • Spread the mixture into a greased 9×13-inch baking dish. Top with shredded mozzarella followed by cheddar, and then arrange the remaining ¼ cup of sliced mushrooms on top.
  • Bake for 25–30 minutes, or until hot and bubbly.
