Ingredients

  • 4 Italian sausage links (mild or hot), sliced into rounds

  • 1 tablespoon olive oil

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • ½ yellow onion, sliced

  • 1 teaspoon Italian seasoning

  • Salt and pepper to taste

Directions

  • Heat olive oil in a large skillet over medium heat.
  • Add sliced sausage and cook until browned and heated through, about 6–8 minutes. Remove and set aside.
  • In the same skillet, sauté peppers and onions until soft and caramelized, 7–9 minutes.
  • Return sausage to the pan, stir in Italian seasoning, and cook another 1–2 minutes.
  • Serve hot as is or over cauliflower rice.
