This one’s herby, cheesy, and totally different from the usual keto casseroles. Pesto brings a big punch of flavor with barely any carbs.
Keto Pesto Beef Bake

Ingredients
1 ½ lbs ground beef
½ cup no-sugar-added basil pesto
2 cups chopped spinach or kale (fresh or frozen and thawed)
¾ cup ricotta or cream cheese
2 cups shredded mozzarella
Salt and pepper
Directions
- Preheat oven to 375°F.
- In a large skillet, cook ground beef. Stir in pesto and spinach. Cook 2–3 minutes until spinach is wilted.
- Reduce heat and mix in ricotta or cream cheese. Stir until creamy. Season with salt and pepper to taste.
- Spread into a greased 9×13-inch baking dish and top with mozzarella.
- Bake for 25–30 minutes, until hot and bubbly.
