Ingredients

  • 1 ½ lbs ground beef

  • ½ cup no-sugar-added basil pesto

  • 2 cups chopped spinach or kale (fresh or frozen and thawed)

  • ¾ cup ricotta or cream cheese

  • 2 cups shredded mozzarella

  • Salt and pepper

Directions

  • Preheat oven to 375°F.
  • In a large skillet, cook ground beef. Stir in pesto and spinach. Cook 2–3 minutes until spinach is wilted.
  • Reduce heat and mix in ricotta or cream cheese. Stir until creamy. Season with salt and pepper to taste.
  • Spread into a greased 9×13-inch baking dish and top with mozzarella.
  • Bake for 25–30 minutes, until hot and bubbly.
