A low-carb, cheesy twist on the classic Reuben sandwich—this comforting casserole delivers all the tangy, savory flavor with none of the bread.

Ingredients
1 ½ lb ground beef (or 1 ½ lb of cooked corned beef chopped or shredded)
1 cup sauerkraut, drained
½ cup sugar-free Thousand Island dressing
1 ½ cups shredded Swiss cheese
1 cup shredded mozzarella
Optional: caraway seeds for garnish
Directions
- Preheat oven to 375°F and grease a 9×13 baking dish.
- If using ground beef: Brown it in a skillet over medium heat, then drain excess fat.

- Spread the mixture evenly into the prepared baking dish.
- Top with Swiss and mozzarella cheeses.
- Bake uncovered for 25–30 minutes, or until cheese is melted and bubbly.
- Sprinkle with caraway seeds before serving, if desired.
