A low-carb, cheesy twist on the classic Reuben sandwich—this comforting casserole delivers all the tangy, savory flavor with none of the bread.

Ingredients

  • 1 ½ lb ground beef (or 1 ½ lb of cooked corned beef chopped or shredded)

  • 1 cup sauerkraut, drained

  • ½ cup sugar-free Thousand Island dressing

  • 1 ½ cups shredded Swiss cheese

  • 1 cup shredded mozzarella

  • Optional: caraway seeds for garnish

Directions

  • Preheat oven to 375°F and grease a 9×13 baking dish.
  • If using ground beef: Brown it in a skillet over medium heat, then drain excess fat.
    brown ground beef. If using cooked corned beef: Skip browning – just chop or shred.
  • In a large bowl (or skillet), mix meat with sauerkraut and Thousand Island dressing.
  • Spread the mixture evenly into the prepared baking dish.
  • Top with Swiss and mozzarella cheeses.
  • Bake uncovered for 25–30 minutes, or until cheese is melted and bubbly.
  • Sprinkle with caraway seeds before serving, if desired.
