Ingredients
1 ½ lbs ground beef
3 bell peppers (any color), diced
1 cup riced cauliflower
1 tsp Italian seasoning
1 ½ cups shredded cheddar or mozzarella
Salt and pepper
Directions
- Preheat oven to 375°F.
- In a large skillet, cook ground beef and bell peppers until beef is browned and peppers are tender.
- Stir in riced cauliflower, Italian seasoning, salt, and pepper.
- Spread mixture in a greased 9×13-inch baking dish. Top with cheese.
- Bake for 20–25 minutes, until hot and bubbly.
