Ingredients

  • 1 ½ lbs ground beef

  • 3 bell peppers (any color), diced

  • 1 cup riced cauliflower

  • 1 tsp Italian seasoning

  • 1 ½ cups shredded cheddar or mozzarella

  • Salt and pepper

Directions

  • Preheat oven to 375°F.
  • In a large skillet, cook ground beef and bell peppers until beef is browned and peppers are tender.
  • Stir in riced cauliflower, Italian seasoning, salt, and pepper.
  • Spread mixture in a greased 9×13-inch baking dish. Top with cheese.
  • Bake for 20–25 minutes, until hot and bubbly.
