Ingredients
1 ½ lbs ground beef
2 to 3 tbsp taco seasoning
1 cup salsa
1 cup riced cauliflower
1 ½ cups shredded Mexican cheese blend
¼ cup beef broth (optional, for more moisture)
Optional toppings: green onions, sour cream
Directions
- Preheat oven to 375°F.
- In a large skillet, brown the ground beef. Stir in taco seasoning, salsa, riced cauliflower, and beef broth if using. Simmer for 2–3 minutes to combine, adjusting salsa for consistency.
- Transfer mixture to a greased 9×13-inch baking dish. Top with shredded cheese.
- Bake for 20 minutes until cheese is melted and bubbly.
- Garnish with green onions or a dollop of sour cream if desired.
