Ingredients
1 ½ lbs boneless, skinless chicken thighs
½ cup sugar-free teriyaki sauce (store-bought or homemade)
1 tbsp sesame oil
4 cups steamed broccoli
2 cups riced cauliflower
½ red bell pepper, thinly sliced
2 green onions, chopped
Sesame seeds for garnish
Directions
- Marinate chicken thighs in teriyaki sauce for at least 30 minutes (optional).
- Cook chicken in a skillet over medium-high heat with sesame oil until browned and cooked through. Slice into strips.
- While the chicken cooks, steam broccoli and cook cauliflower rice until tender.
- In each bowl, layer cauliflower rice, broccoli, chicken, bell pepper, and green onion. Sprinkle with sesame seeds.
Notes
- Add a drizzle of extra teriyaki sauce or sriracha for more kick.
