Ingredients

  • 1 ½ lbs boneless, skinless chicken thighs

  • ½ cup sugar-free teriyaki sauce (store-bought or homemade)

  • 1 tbsp sesame oil

  • 4 cups steamed broccoli

  • 2 cups riced cauliflower

  • ½ red bell pepper, thinly sliced

  • 2 green onions, chopped

  • Sesame seeds for garnish

Directions

  • Marinate chicken thighs in teriyaki sauce for at least 30 minutes (optional).
  • Cook chicken in a skillet over medium-high heat with sesame oil until browned and cooked through. Slice into strips.
  • While the chicken cooks, steam broccoli and cook cauliflower rice until tender.
  • In each bowl, layer cauliflower rice, broccoli, chicken, bell pepper, and green onion. Sprinkle with sesame seeds.

Notes

  • Add a drizzle of extra teriyaki sauce or sriracha for more kick.
