Keto Thai-Inspired Beef Cabbage Casserole

Ingredients
1 ½ lbs ground beef
1 small head green cabbage, shredded
1 small onion, chopped
1 tbsp grated fresh ginger (or 1 tsp ground ginger)
½ cup coconut milk
2 tbsp coconut aminos or soy sauce
1 tsp garlic powder
Salt and pepper
1 ½ cups shredded mozzarella cheese
Optional: sesame seeds or green onions for garnish
Directions
- Preheat oven to 375°F.
- In a large skillet, cook ground beef with onion and ginger until beef is browned.
- Stir in cabbage and cook for 5–7 minutes, until it begins to soften.
- Add coconut milk, coconut aminos, garlic powder, salt, and pepper. Simmer for a few minutes to combine.
- Transfer mixture to a greased 9×13-inch baking dish.
- Top evenly with shredded mozzarella.
- Bake for 25–30 minutes, until hot and bubbly with golden melted cheese.
- Garnish with sesame seeds or green onions if desired.
