Ingredients

  • 1 lb carrots, cut into sticks

  • 2 tbsp olive oil

  • 1 tbsp maple syrup

  • 1/2 cup plain yogurt (or dairy-free)

  • 1 tsp cumin

  • 1/2 tsp paprika

  • Salt and pepper to taste

Directions

  • Preheat oven to 425°F. Toss carrots with olive oil, maple syrup, salt, and pepper.
  • Spread on a baking sheet and roast 20–25 minutes until caramelized.
  • Mix yogurt with cumin and paprika for dipping.
