Parsnips don’t usually get much attention at Thanksgiving, but this recipe changes that.
Roasting them brings out a natural sweetness, and the maple-thyme combo makes them taste like fall on a plate.
It’s simple, rustic, and a nice break from potatoes.
Maple Roasted Parsnips with Thyme

Ingredients
1 lb parsnips, peeled and cut into sticks
2 tbsp olive oil
2 tbsp maple syrup
1 tsp fresh thyme leaves
Salt and pepper to taste
Directions
- Preheat oven to 400°F and line a baking sheet.
- Toss parsnips with olive oil, maple syrup, thyme, salt, and pepper.
- Roast for 25–30 minutes, stirring once, until golden and tender.
