1 lb ground beef
1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) enchilada sauce
1 cup corn
2 cups shredded cheddar cheese
8 corn tortillas
1 teaspoon cumin
1 teaspoon chili powder
1/2 cup diced onions
1 avocado, sliced (for garnish)
Fresh cilantro, chopped (for garnish)
Directions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef with onions over medium heat until browned. Drain any excess fat, then stir in the beans, corn, enchilada sauce, cumin, and chili powder. Cook for about 5 minutes until heated through.
