2 large boneless, skinless chicken breasts
1 tablespoon Cajun seasoning (plus more to taste)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cups heavy cream
1 cup chicken broth
4 ounces cream cheese, cubed
1 cup grated Parmesan cheese
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce (optional, for extra heat)
12 ounces fettuccine pasta
2 tablespoons butter
1/2 cup chopped sun-dried tomatoes (optional)
1/4 cup chopped fresh parsley (for garnish)
Directions
- Season the chicken breasts with Cajun seasoning, garlic powder, onion powder, paprika, salt, and black pepper.
- Place the chicken in the slow cooker and pour in the heavy cream and chicken broth. Add the cream cheese cubes and cover.
- Cook on low for 4-5 hours or until the chicken is tender and easily shredded.
- Remove the chicken, shred it with two forks, and return it to the slow cooker. Stir in Parmesan cheese, Worcestershire sauce, and hot sauce if using.
- Cook the fettuccine pasta separately according to the package instructions. Drain and toss with butter.
- Add the cooked pasta and sun-dried tomatoes (if using) to the slow cooker, stirring everything together until coated in the creamy sauce.
- Let everything sit for about 10 minutes to allow the sauce to thicken. Garnish with fresh parsley and serve warm.
