Ingredients
1 ½ pounds pork tenderloin
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon smoked paprika
⅓ cup honey
⅓ cup Dijon mustard
2 tablespoons whole grain mustard
2 tablespoons apple cider vinegar
1 tablespoon soy sauce
3 cloves garlic, minced
½ teaspoon red pepper flakes (optional)
Directions
- Pat the pork tenderloin dry with paper towels and season with salt, pepper, garlic powder, onion powder, and smoked paprika.
- In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, apple cider vinegar, soy sauce, minced garlic, and red pepper flakes (if using).
- Place the pork tenderloin in the slow cooker and pour the honey mustard mixture over the top, making sure the tenderloin is well coated.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the pork is tender and easily shreddable.
- Remove the pork from the slow cooker and let it rest for a few minutes before slicing.
- If desired, pour the remaining cooking liquid into a small saucepan and simmer for a few minutes until slightly thickened for a flavorful sauce.
- Serve the sliced pork drizzled with the sauce over mashed potatoes, rice, or roasted vegetables.
Notes
- This dish pairs beautifully with roasted carrots or a simple side salad, making it a well-rounded, satisfying meal.
