Slow Cooker Reuben-Style Corned Beef

Ingredients

  • 3 lb corned beef brisket (with seasoning packet)

  • 1 can (12 oz) light beer

  • 1 onion, quartered

  • 3 cloves garlic, minced

  • 1 cup sauerkraut

  • 6 slices Swiss cheese

  • Rye bread (for serving)

  • ½ cup Thousand Island dressing (for serving)

Directions

  • Place onions and garlic in the slow cooker. Add corned beef and seasoning packet. Pour in beer.
  • Cook on low for 8 hours.
  • Remove beef, slice, and place on rye bread with Swiss cheese and sauerkraut.
  • Toast until the cheese melts. Serve with Thousand Island dressing.
