Slow Cooker Reuben-Style Corned Beef

Ingredients
3 lb corned beef brisket (with seasoning packet)
1 can (12 oz) light beer
1 onion, quartered
3 cloves garlic, minced
1 cup sauerkraut
6 slices Swiss cheese
Rye bread (for serving)
½ cup Thousand Island dressing (for serving)
Directions
- Place onions and garlic in the slow cooker. Add corned beef and seasoning packet. Pour in beer.
- Cook on low for 8 hours.
- Remove beef, slice, and place on rye bread with Swiss cheese and sauerkraut.
- Toast until the cheese melts. Serve with Thousand Island dressing.
