Ingredients
1.5 pounds boneless, skinless chicken thighs (or breasts)
1/2 cup low-sodium soy sauce
1/4 cup honey
2 tbsp brown sugar
2 tbsp rice vinegar
1 tbsp sesame oil
3 cloves garlic, minced
1 tsp ginger, grated
1/2 cup water
1 tbsp cornstarch (mixed with 2 tbsp water)
Sesame seeds, for garnish
Sliced green onions, for garnish
Directions
- Place the chicken thighs in the slow cooker.
- In a bowl, whisk together soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, ginger, and water. Pour the mixture over the chicken.
- Cover and cook on low for 4-5 hours or until the chicken is tender and easily shredded.
- Remove the chicken from the slow cooker and shred it using two forks.
- In a small bowl, mix the cornstarch with water and stir it into the sauce in the slow cooker. Let it cook for another 10-15 minutes until the sauce thickens.
- Return the shredded chicken to the slow cooker and toss it in the thickened sauce.
- Serve over jasmine rice, garnished with sesame seeds and sliced green onions.
