  • 1.5 pounds boneless, skinless chicken thighs (or breasts)

  • 1/2 cup low-sodium soy sauce

  • 1/4 cup honey

  • 2 tbsp brown sugar

  • 2 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 3 cloves garlic, minced

  • 1 tsp ginger, grated

  • 1/2 cup water

  • 1 tbsp cornstarch (mixed with 2 tbsp water)

  • Sesame seeds, for garnish

  • Sliced green onions, for garnish

Directions

  • Place the chicken thighs in the slow cooker.
  • In a bowl, whisk together soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, ginger, and water. Pour the mixture over the chicken.
  • Cover and cook on low for 4-5 hours or until the chicken is tender and easily shredded.
  • Remove the chicken from the slow cooker and shred it using two forks.
  • In a small bowl, mix the cornstarch with water and stir it into the sauce in the slow cooker. Let it cook for another 10-15 minutes until the sauce thickens.
  • Return the shredded chicken to the slow cooker and toss it in the thickened sauce.
  • Serve over jasmine rice, garnished with sesame seeds and sliced green onions.
