Apple and Brie Quesadillas

Ingredients
4 large flour tortillas
1 small crisp apple (like Honeycrisp or Gala), thinly sliced
8 oz brie cheese, rind removed if preferred, sliced
2 teaspoons butter or olive oil
Optional: honey for drizzling, fresh thyme for garnish
Directions
- Heat a nonstick skillet over medium heat and add 1 teaspoon of butter or oil.
- Place one tortilla in the skillet.
- Layer about 1/4 of the brie slices over the entire tortilla.
- Add half the apple slices in a single layer, then top with another 1/4 of the brie.
- Place a second tortilla on top and press down gently.
- Cook for 2 to 3 minutes per side, until golden brown and the cheese is melted.
- Repeat steps 1–6 with remaining ingredients to make the second quesadilla.
- Let both quesadillas rest for 1 minute, then slice each into 4 wedges.
- Optional: Drizzle with honey and sprinkle with fresh thyme before serving.
