Ingredients

  • 2 pounds pork shoulder

  • 1 cup BBQ sauce (plus additional 1/2 to 1 cup of chicken broth or water)

  • 1 onion, sliced

  • Salt and pepper to taste

  • 4 cups mashed potatoes

  • 2 cups coleslaw

Directions

  • Place the pork shoulder in a slow cooker with the BBQ sauce, onion, and an additional 1/2 to 1 cup of chicken broth or water to ensure there is enough liquid to prevent drying out.
  • Season the pork with salt and pepper.
  • Cook on low for approximately 8 hours or on high for 4-5 hours, until the pork is tender and can be easily shredded with a fork.
  • Once cooked, shred the pork directly in the slow cooker, mixing it with the juices and sauce.
  • Serve the pulled pork over mashed potatoes, with coleslaw on the side or on top for added texture and flavor.
