Ingredients

  • 1 lb ribeye or sirloin steak, thinly sliced

  • Salt, to taste

  • 2 tablespoons beef tallow (or butter)

  • ½ cup beef broth (homemade preferred)

  • ½ cup sour cream

  • Optional: ¼ teaspoon garlic powder (if not strict carnivore)

Directions

  • Season beef slices lightly with salt.
  • Heat beef tallow in a skillet over medium-high heat. Sear beef in batches until browned, about 1–2 minutes per side. Remove to a plate.
  • Lower heat to medium and add broth. Let simmer for 2–3 minutes to reduce slightly.
  • Stir in sour cream and optional garlic powder if using. Let warm gently—don’t boil.
  • Return beef to the pan, stir to coat, and heat through.
  • Serve as-is or with optional shredded cheese on top.
