Beef Tip Stroganoff

Ingredients
1 ½ lbs beef tips (or stew meat)
Salt and pepper
2 tablespoons olive oil
1 small yellow onion, diced
2 cloves garlic, minced
8 oz cremini mushrooms, sliced
½ cup dry red wine (or more broth)
1 cup beef broth
1 tablespoon Worcestershire sauce
½ teaspoon thyme
½ cup sour cream
1 teaspoon cornstarch + 2 teaspoons water (optional)
Egg noodles or mashed potatoes, for serving
Fresh parsley for garnish
Directions
- Season beef tips with salt and pepper.
- Heat 1 tablespoon olive oil in a large skillet or Dutch oven. Sear beef in batches until browned. Remove and set aside.
- Add remaining oil, sauté onions 3–4 minutes. Add garlic and mushrooms; cook until browned.
- Pour in red wine, scrape up bits, and simmer 3–4 minutes.
- Add broth, Worcestershire, and thyme. Return beef to pan. Simmer covered for 45–60 minutes, until tender.
- Stir in sour cream. Optional: add cornstarch slurry and simmer 2 minutes to thicken.
- Serve over egg noodles or mashed potatoes. Garnish with parsley.
