Ingredients

  • 1 ½ lbs beef tips (or stew meat)

  • Salt and pepper

  • 2 tablespoons olive oil

  • 1 small yellow onion, diced

  • 2 cloves garlic, minced

  • 8 oz cremini mushrooms, sliced

  • ½ cup dry red wine (or more broth)

  • 1 cup beef broth

  • 1 tablespoon Worcestershire sauce

  • ½ teaspoon thyme

  • ½ cup sour cream

  • 1 teaspoon cornstarch + 2 teaspoons water (optional)

  • Egg noodles or mashed potatoes, for serving

  • Fresh parsley for garnish

Directions

  • Season beef tips with salt and pepper.
  • Heat 1 tablespoon olive oil in a large skillet or Dutch oven. Sear beef in batches until browned. Remove and set aside.
  • Add remaining oil, sauté onions 3–4 minutes. Add garlic and mushrooms; cook until browned.
  • Pour in red wine, scrape up bits, and simmer 3–4 minutes.
  • Add broth, Worcestershire, and thyme. Return beef to pan. Simmer covered for 45–60 minutes, until tender.
  • Stir in sour cream. Optional: add cornstarch slurry and simmer 2 minutes to thicken.
  • Serve over egg noodles or mashed potatoes. Garnish with parsley.
