Ingredients
1 cup quinoa, rinsed and cooked
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 cup Kalamata olives, sliced
1/2 cup feta cheese, crumbled
2 tablespoons olive oil
Juice of 1 lemon
Salt and pepper to taste
Directions
- Cook quinoa according to package instructions, then fluff with a fork.
- In a bowl, combine quinoa, cherry tomatoes, cucumber, olives, and feta.
- Drizzle with olive oil and lemon juice. Season with salt and pepper.
- Toss to combine and serve chilled or at room temperature.
