Ingredients
2 chicken breasts, sliced
1 tablespoon fajita seasoning
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
1 tablespoon olive oil
2 cups cooked rice
1/2 cup shredded cheese
1/2 cup salsa
Sour cream and guacamole for serving
Directions
- Toss sliced chicken with fajita seasoning. Heat olive oil in a skillet and cook chicken until browned.
- Add bell peppers and onion to the skillet, sautéing until tender.
- Serve chicken and veggies over rice, topped with cheese and salsa. Offer sour cream and guacamole on the side.
