Ingredients
1 cup brown rice, cooked
1 can chickpeas, drained and rinsed
2 cups assorted vegetables (e.g., sweet potatoes, broccoli, bell peppers), roasted
1/4 cup tahini
2 tablespoons lemon juice
1 tablespoon maple syrup
Salt and pepper to taste
Directions
- Roast your choice of vegetables until tender and slightly caramelized.
- In a small bowl, whisk together tahini, lemon juice, maple syrup, salt, and pepper to make the dressing.
- Assemble the bowl with cooked brown rice, chickpeas, and roasted vegetables.
- Drizzle with tahini sauce before serving.
