Ingredients

  • 1 pound shrimp, peeled and deveined

  • 1 cup all-purpose flour

  • 2 eggs, beaten

  • 1 cup panko breadcrumbs

  • Oil for frying

  • 1 cup mayonnaise

  • 2 tablespoons Sriracha sauce

  • 1 tablespoon honey

  • 2 cups Jasmine rice, cooked

  • 3 green onions, sliced

Directions

  • Prepare three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  • Coat each shrimp in flour, dip in egg, and then cover with breadcrumbs.
  • Heat oil in a pan to 350°F (175°C) and fry shrimp until golden brown, approximately 2-3 minutes per side. Drain on paper towels.
  • In a separate bowl, mix mayonnaise, Sriracha, and honey to make the spicy mayo sauce.
  • Toss the cooked shrimp in the spicy mayo sauce until well-coated.
  • Serve the shrimp over cooked Jasmine rice and sprinkle with sliced green onions.
