  • 1 pound salmon, cut into bite-sized pieces

  • 1 cup panko breadcrumbs

  • 2 eggs, beaten

  • 1/2 cup mayonnaise

  • 1 tablespoon chili sauce

  • 1 teaspoon soy sauce

  • 2 cups rice, cooked

  • Broccoli florets, steamed

Directions

  • Preheat oven to 400°F (200°C). Coat salmon pieces in beaten eggs, then roll in panko breadcrumbs.
  • Place salmon bites on a baking sheet and bake for 12-15 minutes or until crispy.
