Ingredients

  • 8 large eggs

  • 1 tbsp butter

  • 8 slices bacon, cooked and chopped

  • 2 avocados, sliced

  • 1 cup shredded cheddar cheese

  • ½ cup diced tomatoes

  • 4 cups baby spinach, sautéed or raw

  • Salt and pepper to taste

Directions

  • Scramble eggs in butter until just set. Season with salt and pepper.
  • In each bowl, layer spinach, scrambled eggs, chopped bacon, avocado slices, cheddar, and tomatoes.
  • Serve warm with hot sauce or sugar-free ketchup, if desired.

Notes

  • Great way to use up breakfast ingredients. Swap bacon for sausage if preferred.
