Breakfast-for-Dinner Keto Bowl

Ingredients
8 large eggs
1 tbsp butter
8 slices bacon, cooked and chopped
2 avocados, sliced
1 cup shredded cheddar cheese
½ cup diced tomatoes
4 cups baby spinach, sautéed or raw
Salt and pepper to taste
Directions
- Scramble eggs in butter until just set. Season with salt and pepper.
- In each bowl, layer spinach, scrambled eggs, chopped bacon, avocado slices, cheddar, and tomatoes.
- Serve warm with hot sauce or sugar-free ketchup, if desired.
Notes
- Great way to use up breakfast ingredients. Swap bacon for sausage if preferred.
