Ingredients

  • 2 cups brussels sprouts, shredded

  • 1 small onion, grated

  • 1/4 cup flour

  • 1 egg (or flax egg)

  • Salt and pepper to taste

  • 1/2 cup sour cream (or vegan sour cream)

  • 1 tsp maple syrup

  • Olive oil for frying

Directions

  • Mix brussels sprouts, onion, flour, egg, salt, and pepper in a bowl.
  • Heat oil in a skillet and drop spoonfuls of the mixture, flattening into small cakes. Fry 2–3 minutes per side until golden.
  • Stir maple syrup into sour cream and serve with hot latkes.
