Latkes are usually made with potatoes, but swapping in brussels sprouts gives them a new twist. They fry up crispy and pair perfectly with maple-sweetened sour cream. It’s unusual, festive, and fun to serve as finger food.
Brussels Sprout Latkes with Maple Sour Cream

Ingredients
2 cups brussels sprouts, shredded
1 small onion, grated
1/4 cup flour
1 egg (or flax egg)
Salt and pepper to taste
1/2 cup sour cream (or vegan sour cream)
1 tsp maple syrup
Olive oil for frying
Directions
- Mix brussels sprouts, onion, flour, egg, salt, and pepper in a bowl.
- Heat oil in a skillet and drop spoonfuls of the mixture, flattening into small cakes. Fry 2–3 minutes per side until golden.
- Stir maple syrup into sour cream and serve with hot latkes.
