Ingredients
1 bag (32 oz) frozen tater tots
1 lb ground chicken or 2 cups shredded cooked chicken
1 tbsp taco seasoning
½ cup water
1 cup shredded cheddar cheese
½ cup diced tomatoes
¼ cup sliced black olives
¼ cup diced green onions
Sour cream and salsa for serving
Directions
- Preheat your oven and bake the tater tots according to the package instructions until they are golden and crispy.
- While the tater tots are baking, prepare the chicken.
- If using ground chicken, cook it in a skillet over medium heat until it is fully cooked and no longer pink. Drain any excess liquid.
- If using pre-cooked shredded chicken, place it in a skillet and warm it over medium heat.
- Add the taco seasoning and ½ cup of water to the chicken in the skillet. Stir well and let it simmer for about 5 minutes, allowing the flavors to meld together.
- Once the tater tots are done, arrange them on a large baking sheet. Evenly spread the seasoned chicken over the tater tots.
- Sprinkle the shredded cheddar cheese over the chicken and tots. Return to the oven and bake at 375°F for about 5 minutes, or just until the cheese is melted and bubbly.
- Remove from the oven and top with diced tomatoes, sliced black olives, and diced green onions for added color and flavor.
- Serve immediately with sour cream and salsa on the side for dipping.
