Ingredients

  • 1 lb frozen meatballs

  • 1 can coconut milk

  • 2 tablespoons red curry paste

  • 1 tablespoon soy sauce

  • 1 tablespoon honey

  • 1 teaspoon garlic powder

  • 1 teaspoon ginger powder

  • 1/2 teaspoon red pepper flakes (optional)

Directions

  • Add meatballs to the crockpot.
  • In a bowl, whisk together coconut milk, red curry paste, soy sauce, honey, garlic powder, and ginger powder. Pour over meatballs.
  • Cover and cook on low for 6 hours or high for 3 hours.
  • Serve over jasmine rice, garnished with fresh cilantro.
