Ingredients

  • 1 lb smoked sausage, sliced

  • 2 medium sweet potatoes, peeled and cubed

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, sliced

  • 1 can (14.5 oz) diced tomatoes, with juice

  • 2 cups chicken broth

  • 1 tsp smoked paprika

  • 1/2 tsp dried thyme

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 can (15 oz) white beans, drained and rinsed

  • 2 cups chopped kale or spinach (optional)

Directions

  • In a skillet over medium heat, brown the sliced sausage for a few minutes until slightly crispy. This step adds depth of flavor but can be skipped if short on time.
  • Add the browned sausage, sweet potatoes, onion, garlic, carrots, diced tomatoes, and chicken broth to the slow cooker.
  • Stir in the smoked paprika, thyme, salt, and black pepper. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.
  • About 30 minutes before serving, stir in the white beans and kale or spinach, if using. Let them warm through.
  • Taste and adjust seasoning if needed. Serve hot with crusty bread or over rice for a heartier meal.
