These Cranberry Brie Bites are one of my favorite holiday appetizers to make when I want something that looks impressive but takes almost no time at all. The puff pastry turns golden and crisp, the brie gets warm and melty, and the cranberry sauce adds a sweet-tart finish in each bite. I make these every year for Friendsgiving and they always disappear fast. The brie and cranberry combo just works, and using store-bought puff pastry makes them so simple. You can even prep them in advance, freeze them in the muffin tin, and bake straight from frozen.

Ingredients

  • 1 sheet puff pastry, thawed

  • 4 oz Brie cheese, cut into small cubes (trim the rind for a smoother melt, though it’s edible and softens as it bakes)

  • 1/4 cup cranberry sauce

  • 1 egg, beaten (for egg wash)

Directions

  • Preheat oven to 375°F (190°C). Lightly grease a mini muffin pan.
  • Cut puff pastry into 2-inch squares and press into each muffin cup, letting the corners stick up.
  • Add a cube of Brie and about 1 teaspoon cranberry sauce to each pastry cup.
  • Brush exposed pastry with beaten egg.
  • Bake for 12–15 minutes, or until the puff pastry is golden and crisp.
  • Cool slightly before removing from the pan. Serve warm or at room temperature.

Make-Ahead Tip

Assemble bites in the muffin tin, then freeze until solid. Once frozen, transfer to a zip-top bag. Bake directly from frozen at 375°F for 15–18 minutes.
