Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces

  • 2 tbsp olive oil or butter

  • 8 oz sliced mushrooms

  • 2 garlic cloves, minced

  • ½ cup heavy cream

  • ¼ cup chicken broth

  • ¼ cup grated Parmesan cheese

  • Salt and pepper to taste

  • 4 cups cooked cauliflower rice

Directions

  • In a large skillet, heat olive oil and sauté chicken until golden and cooked through. Remove and set aside.
  • In the same skillet, sauté mushrooms until browned. Add garlic and cook 1 more minute.
  • Pour in heavy cream, broth, and Parmesan. Stir until smooth, then return chicken to the pan and simmer 5 minutes.
  • Serve creamy chicken and mushrooms over cauliflower rice.

Notes

  • Add spinach or kale to the sauce if you want extra greens.
