Creamy Mushroom & Chicken Keto Protein Bowl

Ingredients
1 ½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil or butter
8 oz sliced mushrooms
2 garlic cloves, minced
½ cup heavy cream
¼ cup chicken broth
¼ cup grated Parmesan cheese
Salt and pepper to taste
4 cups cooked cauliflower rice
Directions
- In a large skillet, heat olive oil and sauté chicken until golden and cooked through. Remove and set aside.
- In the same skillet, sauté mushrooms until browned. Add garlic and cook 1 more minute.
- Pour in heavy cream, broth, and Parmesan. Stir until smooth, then return chicken to the pan and simmer 5 minutes.
- Serve creamy chicken and mushrooms over cauliflower rice.
Notes
- Add spinach or kale to the sauce if you want extra greens.
