Risotto feels fancy, but this version is easy enough for a holiday side. Pumpkin makes it creamy without much effort, and sage brings that classic Thanksgiving flavor. It’s unusual, cozy, and still weeknight-simple.
Creamy Pumpkin Sage Risotto

Ingredients
1 tbsp olive oil
1 small onion, finely chopped
1 cup arborio rice
1/2 cup pumpkin purée
3 cups vegetable broth, warmed
1/4 cup nutritional yeast or parmesan (optional)
1 tbsp fresh sage, chopped
Salt and pepper to taste
Directions
- Heat olive oil in a pan, add onion, and cook until softened. Stir in arborio rice.
- Add broth 1/2 cup at a time, stirring until absorbed before adding more, until rice is tender and creamy (about 20 minutes).
- Stir in pumpkin purée, sage, and nutritional yeast/parmesan. Season to taste and serve warm.
