Ingredients

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 1 cup arborio rice

  • 1/2 cup pumpkin purée

  • 3 cups vegetable broth, warmed

  • 1/4 cup nutritional yeast or parmesan (optional)

  • 1 tbsp fresh sage, chopped

  • Salt and pepper to taste

Directions

  • Heat olive oil in a pan, add onion, and cook until softened. Stir in arborio rice.
  • Add broth 1/2 cup at a time, stirring until absorbed before adding more, until rice is tender and creamy (about 20 minutes).
  • Stir in pumpkin purée, sage, and nutritional yeast/parmesan. Season to taste and serve warm.
