Ingredients
2 boneless chicken breasts
1 tbsp olive oil
2 cloves garlic, minced
¼ cup chopped sun-dried tomatoes
½ cup chicken broth
½ cup heavy cream
½ cup baby spinach
Salt and pepper to taste
Directions
- Season chicken with salt and pepper. Sear in olive oil over medium heat, 4-5 minutes per side. Remove.
- Add garlic and sun-dried tomatoes to pan. Cook 1 minute.
- Stir in broth and cream. Simmer 2-3 minutes.
