Ingredients
1 pound salmon, cut into bite-sized pieces
1 cup panko breadcrumbs
2 eggs, beaten
1/2 cup mayonnaise
1 tablespoon chili sauce
1 teaspoon soy sauce
2 cups rice, cooked
Broccoli florets, steamed
Directions
- Preheat oven to 400°F (200°C). Coat salmon pieces in beaten eggs, then roll in panko breadcrumbs.
- Place salmon bites on a baking sheet and bake for 12-15 minutes or until crispy.
- Mix mayonnaise, chili sauce, and soy sauce to make the spicy sweet sauce.
- Toss baked salmon bites in the sauce and serve over a bed of rice and steamed broccoli.
