Stacked with a bit of cheese and topped with cranberry relish, it’s colorful and unexpected.
They look like little gourmet bites, but they’re actually really easy to make.
Crispy Polenta Stacks with Cranberry Relish

Ingredients
1 tube prepared polenta, sliced into rounds
2 tbsp olive oil
1/2 cup shredded mozzarella or plant-based cheese
1/2 cup cranberry relish or sauce
Directions
- Preheat oven to 425°F. Brush polenta slices with olive oil and place on a lined baking sheet.
- Roast for 20 minutes, flipping halfway, until crisp.
- Stack with cheese and a spoonful of cranberry relish. Serve warm.
