Ingredients

  • 1 tube prepared polenta, sliced into rounds

  • 2 tbsp olive oil

  • 1/2 cup shredded mozzarella or plant-based cheese

  • 1/2 cup cranberry relish or sauce

Directions

  • Preheat oven to 425°F. Brush polenta slices with olive oil and place on a lined baking sheet.
  • Roast for 20 minutes, flipping halfway, until crisp.
  • Stack with cheese and a spoonful of cranberry relish. Serve warm.
