Crockpot Bruschetta Chicken

Ingredients
4 boneless, skinless chicken breasts
1 can (14.5 oz) diced tomatoes with basil and garlic
2 cloves garlic, minced
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon Italian seasoning
1 cup shredded mozzarella
1/4 cup chopped fresh basil
Optional: toasted baguette slices or pasta for serving
Directions
- Place chicken in the slow cooker and top with tomatoes, garlic, balsamic, salt, and Italian seasoning.
- Cook on low for 6–7 hours or high for 3–4 hours.
- During the last 15 minutes, sprinkle with mozzarella and fresh basil.
- Serve as is or over pasta or toasted bread slices.
