Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 can (14.5 oz) diced tomatoes with basil and garlic

  • 2 cloves garlic, minced

  • 1 tablespoon balsamic vinegar

  • 1/2 teaspoon salt

  • 1/2 teaspoon Italian seasoning

  • 1 cup shredded mozzarella

  • 1/4 cup chopped fresh basil

  • Optional: toasted baguette slices or pasta for serving

Directions

  • Place chicken in the slow cooker and top with tomatoes, garlic, balsamic, salt, and Italian seasoning.
  • Cook on low for 6–7 hours or high for 3–4 hours.
  • During the last 15 minutes, sprinkle with mozzarella and fresh basil.
  • Serve as is or over pasta or toasted bread slices.
