Crockpot Caprese Chicken with Balsamic Glaze

Ingredients
2 boneless, skinless chicken breasts
1 cup cherry tomatoes, halved
1/2 cup shredded mozzarella (or 4 slices)
1/4 cup basil pesto
Salt and pepper, to taste
Balsamic glaze, for drizzling
Fresh basil, for garnish
Directions
- Season chicken with salt and pepper and place in slow cooker.
- Spread pesto over chicken and scatter tomatoes on top.
- Cook on low for 5–6 hours or high for 2.5–3 hours.
- Top with mozzarella 10 minutes before serving and let it melt.
- Drizzle with balsamic glaze and garnish with fresh basil.
