Crockpot Caprese Chicken with Balsamic Glaze

Ingredients

  • 2 boneless, skinless chicken breasts

  • 1 cup cherry tomatoes, halved

  • 1/2 cup shredded mozzarella (or 4 slices)

  • 1/4 cup basil pesto

  • Salt and pepper, to taste

  • Balsamic glaze, for drizzling

  • Fresh basil, for garnish

Directions

  • Season chicken with salt and pepper and place in slow cooker.
  • Spread pesto over chicken and scatter tomatoes on top.
  • Cook on low for 5–6 hours or high for 2.5–3 hours.
  • Top with mozzarella 10 minutes before serving and let it melt.
  • Drizzle with balsamic glaze and garnish with fresh basil.
