Ingredients
2 boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 (24-ounce) jar marinara sauce
1/2 cup chicken broth
1/2 teaspoon red pepper flakes (optional)
8 ounces penne or rotini pasta
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh basil (optional)
Directions
- Place the chicken breasts in the crockpot and season with salt, pepper, Italian seasoning, garlic powder, and onion powder.
- Pour the marinara sauce and chicken broth over the chicken. Add red pepper flakes if using.
- Cover and cook on low for 5-6 hours or on high for 3-4 hours, until the chicken is tender and easily shreds.
- Shred the chicken directly in the crockpot using two forks. Stir to combine with the sauce.
- Add the uncooked pasta and mix well. Cover and cook on high for 20-25 minutes, or until the pasta is tender. Stir occasionally to prevent sticking.
- Sprinkle the shredded mozzarella and Parmesan cheese over the pasta. Cover and let sit for 5 minutes until melted.
- Garnish with fresh basil if desired and serve warm.
