Crockpot Chipotle Honey Chicken Tacos

Ingredients
2 lbs boneless, skinless chicken breasts
2 chipotle peppers in adobo sauce, minced
1/4 cup honey
1/4 cup tomato sauce
2 tablespoons apple cider vinegar
2 cloves garlic, minced
1/2 teaspoon smoked paprika
Salt and pepper, to taste
Tortillas, for serving
Optional toppings: avocado, slaw, queso fresco, lime wedges
Directions
- Add chicken, chipotle peppers, honey, tomato sauce, vinegar, garlic, paprika, salt, and pepper to the slow cooker.
- Cover and cook on low for 6 hours or high for 3–4 hours.
- Shred chicken and stir well.
- Serve in tortillas with fresh toppings.
