Ingredients
6 bone-in, skin-on chicken thighs
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon dried rosemary
½ teaspoon paprika
1 tablespoon lemon juice
½ cup chicken broth
4 garlic cloves, minced
Directions
- Heat the olive oil in a skillet over medium-high heat. Sear the chicken thighs skin-side down for 2-3 minutes until golden brown. This step is optional but enhances the flavor.
- In a small bowl, mix the salt, black pepper, garlic powder, onion powder, thyme, rosemary, and paprika.
- Rub the seasoning mix all over the chicken thighs.
- Place the chicken in the crockpot and add the lemon juice, chicken broth, and minced garlic.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily pulls away from the bone.
- For crispy skin, transfer the cooked chicken to a baking sheet and broil for 3-4 minutes before serving.
- Serve hot with your favorite sides, and enjoy!
