Crockpot Honey Garlic Chicken Lettuce Cups

Ingredients
2 lbs ground chicken or chopped boneless thighs
1/3 cup honey
1/4 cup low-sodium soy sauce
2 cloves garlic, minced
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/2 teaspoon crushed red pepper flakes (optional)
Butter lettuce or Bibb lettuce, for serving
Optional toppings: green onions, sesame seeds, shredded cabbage
Directions
- Place all ingredients (except lettuce and toppings) into the slow cooker.
- Stir to combine. Cover and cook on low for 4 hours or high for 2 hours.
- Stir before serving to coat evenly.
- Spoon mixture into lettuce leaves and top as desired.
Notes
- Tip: Swap lettuce for rice bowls if you want a more filling option.
