  • ½ pound pork tenderloin (cut from a larger one if needed)

  • 1 small apple, unpeeled and sliced

  • ½ small onion, sliced

  • ¼ cup apple juice or chicken broth

  • ½ teaspoon Dijon mustard

  • ¼ teaspoon dried thyme

  • Salt and pepper, to taste

Directions

  • Place the sliced apples and onions in the bottom of a 3 to 4 quart slow cooker.
  • Season the pork with salt, pepper, and thyme, then lay it on top of the apples and onions.
  • In a small bowl, mix the apple juice and Dijon mustard. Pour the mixture over the pork.
  • Cover and cook on low for 4 to 5 hours, or until the pork is tender and reaches an internal temperature of 145°F.
  • Slice the pork and serve topped with the cooked apples and onions.
